YAY.. FRIDAY!!

I LIVE for the weekends!!  WOOHOO!!  I have been doing very well since re-starting - no cheats!!  Last night I made the best pork loin I have ever made and just remembered that I left it in the fridge at work :(  I bought half a pork loin at Aldi and then I cut in in half and froze half for another day.  I rubbed the loin with a few tablespoons of low carb barbeque sauce and threw a sliced onion in the pan.  Then I glugged a little diet coke into the bottom of the pan!  Baked at 375 degrees till the thermometer registered 165 internal and YUM!!  It was incredible!  The sauce and onions were amazing!

What else is new?  Nothing at all, but I want to get back into the routine of posting on my blog.  I feel like it keeps me on track!

Starting over!!

You may have noticed I haven't posted in quite a while.  Well.. I was a BAD GIRL!  I fell off the wagon a few times the week before last, but managed to lose a 1/2 pound.  Then this past week I was doing really well until Thursday.. then it was all downhill.  I went out of town for a bachelorette party and went wild!  Beer, chips, regular pop.  It was pretty pathetic!!  Now I am up to 282!!  Today I am starting induction all over again.  I am disappointed in myself.  Feeling pretty blue :(  Went to the grocery and stocked up on legal and yummy foods and am ready to get this party started!

Day 15: 279.6 :(

So, I gained .2 this week.  I knew I wouldn't have a big loss since I lost so much my first week.. and after my cheating on Saturday night I was positive I might have a gain.  Plus I got my "monthly bill" from mother nature.  All around it has been a rough week so far.  Still fighting this cold and today I took the day off from work.  Do you feel extremely guilty when calling off sick?  I always have.  I could be on my death bed and still feel terrible about calling off.  It made it worse when I called to tell the family I was sick and the mother says "I'm sick, too".  What do you say to that?  Maybe "OK, let me come into work and we can both be sick together with your two children" would have been an appropriate response?  Who knows.  Yes, I am crabby today.. and I want to curl up in a ball and eat brownies and pizza and cry.  Don't worry!  I won't!  I haven't eaten yet today and have no idea what is on the menu, so I will update this a little later.

I am feeling a little better after a two hour nap and a nice dinner that my sweetie picked up for us from Bob Evans:)  Tomorrow is a new day!

Day 14: Monday, Monday.

What a crummy day!  I was fighting a cold and I am retaining water like mad thanks to mother nature's monthly gift.  I did well with my eating, though.  Tuesday is weigh-in day and I am not looking forward to it!  Between the cheat over the weekend and the water retention, it's not going to be pretty.  Oh well!  It has to be done!!

Day 13: Happy Mother's Day!

I had a wonderful day with family today!!  My brother-in-law and his wife are also living a low carb life, so we had lots of good food to choose from today.  He has lost 40 pounds and she has lost 26 pounds.  They look great and I am so proud of them!  I hope I can have results like that soon!!  Happy Mother's Day to everyone out there!  Oh, and I am back on the wagon from my mistep on Saturday :)  I can't let myself get too down about it or I will give up and go back to my carb filled and crabby existence!!  Keep on truckin'!

Ugh.  Tomorrow is Monday :(  Great food might make for a great day!  I had better get my menu planned for tomorrow!!

Day 12: Let's do the time warp again :)

We had a busy day on Saturday!  I woke up and went on a cleaning spree!  I cleaned out the bathroom vanity and our enormous medicine cabinet!  I cleaned out the pantry and cleaned the house.  Then my dad, mom, and niece came over and Dad worked on a plumbing problem for us and fixed our air conditioner :)  He is so handy and we keep him busy in our "money pit".  Good news is we don't need a new water heater!!  That saves us a few hundred bucks.. woohoo!!  Then we took naps.  I am not usually a napper, but we made plans to go see The Rocky Horror Picture Show and it is a big event that goes from 11:30pm-2:30am.  We needed to rest up!  Here is where the story goes downhill.. as you will see in my menu below.  Oh, the movie was fabulous, but my willpower sank :(  I have a feeling I won't show much of a loss this week.  Booooo!

D:  3:00am and a visit to White Castle.. 4 sliders and onion peels :(  I had a weak moment.

I will never eat White Castle again.  I swear I ate 10 tums before bed.

Day 11: Fiesta!

I know I am late in writing this!  I have a few days to catch up on!  So, Friday was a pretty good day for eating.  The day dragged on and on.  Fridays always do.  Keeping this short and sweet since I have a lot to get done is a short amount of time :)

I didn't eat much throuout the day and I could feel it!  By the end of the night I was starving!

Day 10: Hey Mambo! Mambo Italiano!

Today was.. well.. not the best.   I take care of two little ones during the day and the 19 month old is so jealous of the 1 1/2 month old.  She is having such a hard time adjusting to the fact that I can't devote all of my attention to her and it is breaking my heart.  Today there were two time-outs.. and I have never had to give her any time-outs before!  Yes, it was only for one minute a piece, but I think I had a harder time with it than she did :(  Anywho, I usually hate to leave when Daddy comes home, but today it was a welcome break!  Plus, I forgot to pack my lunch so I was starving by the time I got home!  They don't keep any low carb friendly items.  They are all organic, but lots of fruit, cereal, rice, noodles, etc..  I did have one VERY NICE surprise tonight!  My sweetie brought home a low carb Italian feast for us!!  Carrabba's. YUM!  See the juicy details below :)

Day 9: ZZZZZZZZZZZZ

I am so tired tonight!!  I am going to keep this short!  Today was a good day!  LONG, but good :)  I am having really bad cravings today and feel like I have been hit by a train.  Could the induction flu be showing up late?  Anyway, I wish it was Friday!!  I feel like I could sleep for an eternity.

Day 8: Oh My My!! 279.4 - 14 pounds gone in one week!!

OMG. OMG. OMG!  Seriously?  14 pounds gone from eating delicious and satisfying foods?  Why did I ever fall of the wagon in the past?!  Today was fabulous :)  Work was amazing... precious babies so how can you go wrong?  Plus, It was weigh in day!  I was so thrilled when I stepped on the scales this morning.  I know the first couple of weeks are when some big losses happen so I am going to try to stay motivated.  I placed an order with Netrition.com and I can't wait to get some goodies before the weekend!!  We just finished a delicious dinner and now I am going to treat myself to a sugar free popsicle :)

Day 7: Just Can't Get Enough!

Today turned out to be a pretty good day.. for a Monday!  I made a trip to the grocery and got some delicious scallops to make for dinner tonight!  I also got two filet mignon out of the freezer (from our cow:) and made a hollandaise sauce to put over some asparagus!  Oh yes, it is going to be a feast to honor my 7th day without any major slip-ups!  Also, to honor the fact that we finally found someone to mow our yard for a reasonable price :)  Mostly it is to honor the soldiers that killed that bas*ard, Osama.. which is far more remarkable that me sticking to a diet for 7 days.  God bless them!! 

B:  3 scrambled eggs, bacon, coffee w. hwc
L:  Salad w. buffalo grilled chicken
D:  Filet mignong, seared scallops, asparagus w. hollandaise

Day 6: Banana Pancakes? None for me, thanks!

Sundays were always a great day for pancakes in our house.  I like mine with chocolate chips :)  Not anymore!!  At least not until I can use some almond meal to make a flapjack with some sugarfree chips.  Sunday we started the day with some yummy eggs and bacon.  My cravings were out of control and I stood in front of the pantry for several minutes until my fiancee offered to go buy me some sugarfree jello before I lost control!!  I ended up eating a 1/2 cup of vanilla carbsmart and some peanut butter.  Hmph.  I won't beat myself up since I know it is better than caving in and ordering a pizza or eating a king size Snickers.  Anyway, I did a lot of lounging around and did many loads of laundry.. still feeling energetic!!  I found a great way to make hamburgers and they were so yummy!!  I used about 1 1/2 teaspoons of dry italian dressing packet mixed with one pound of ground beef.  We bought part of a grass fed cow this year and the meat is so delicous on it's own, but this really added a lot of flavor!  I cooked them in a skillet since our grill needs cleaned so badly (I have energy, but not that much energy)!

L:  2 cheeseburgers w. bacon and mayo, green beans with butter
We ate lunch late so no dinner today!
S:  1/2 c vanilla carbsmart, 1 T peanut butter

Another day down.. how many more till I reach my goal?  I'm hoping to lose at least 50 pounds by October :)  Our wedding!!  YAY!!

Day 5: Oh, Heavenly Day!

I live for the weekends!  I had a busy day and I am glad!  I have energy to do things now thanks to Dr. Atkins.  I woke up and caught up on all the dishes.. our dishwasher is broken and I am lost without it!  I cook so much more when on Atkins and it seems like I can dirty every dish in one meal.  I did some laundry and cleaned a little.  We have three cats and a dog and it is a neverending fight to keep up with the hair balls and dust!  So, it felt great to get so much done.  I haven't had the energy to do more than one chore a day before starting induction and yesterday I accomplished so much!  Oh, we watched a really lame movie.. two hours of my life I will never get back.  Also, I cooked a lot!!

L:  Salad with steak and cheese
D: "Pizza bowls" with pepperoni, hamburger, peppers, onion, and cheese YUM!!

Delicious food for an even more delicious day :)  AHHHH.. love the weekends.

Day 4: It's Friday.. I'm in Love!!

What a marvelous day!!  Friday is fabulous :)  Today I feel good!  I was a little sluggish this morning, but once I had my eggs and bacon I was good to go!!  On top of that I saw the Jimmy Moore listed my little blog on his site today.  How exciting!!  I am new at this blogging thing.  I never expected any visitors.  It was basically a way for me to keep a log of my meals and how I am feeling, but that is super awesome!  Tonight we were invited to a friend's house for dinner.  They were very sweet and had lots of low carb options and we filled our tummies.  It was a wonderful evening and the perfect end to a hectic week.

L:  Buritto bowl w. chicken, peppers, onion, sour cream and cheese, Iced coffee
D:  2 brats, salad, olives, pickles, 2 Mich Ultras :)

I can't wait for my bacon and eggs in the morning!!  My mouth is already watering.  Ahh.. the weekend :)

Day 3: I feel good!!

Today was a great day!  Maybe it's just that I am so excited for Friday or maybe I am actually getting a burst of energy from my LC eating. I was exhausted this morning, but I have felt pretty good the rest of the day.  After getting home from work I did some productive things around the house.. dishes, laundry, fried the bacon.. finally!  Now I am thinking about chowing down on some bacon cheeseburgers for dinner :)  OH YES!!  I saw a commercial on tv about putting a ranch dressing packet into your ground beef when you make your burgs.  Sounds good!  I am going to give that a try.  I am so excited for Tuesday so I can weigh in and see how many pounds have melted away by eating bacon cheeseburgers.  Ha!  I still get a kick out of it :)

Day 2: Oh what a night!

So, I woke up around 2am starving!  Trucked it out the the kitchen and ate some string cheese with my eyes closed.. so very tired!!  It was hard to get going this morning and had a rough day at work.  Like I said, I am a nanny for a 19 month old (and a 1 1/2 month old) and she was a handful today!!  Testing our boundaries is what I think the experts call it.  Tomorrow calls for twice the coffee and more snacks!!  I am glad to be home, but have no idea what to make for dinner.  Something easy.. cheap.. chicken salad it is!!  I think I will make some sort of veggie, too.  As far as the diet goes, I am doing well.  No cheats, though it is only day 2.  I am still hungry most of the time and I have a little headache and am very crabby today!!  I am just going to lay low and watch some tv tonight.  I will be in my pajamas by 7:00 :)  Watch out!  I am wild!!

L:  Leftover parm chicken legs and cauliflower w. cheese sauce, green olives, Coke Zero.
D:  Chicken salad, veggies of some sort, Diet Dr. Pepper.

I must start drinking water!!  I have never been a huge fan of the stuff, but someone once said "What do you hate more?  Being fat or drinking water?".  Do I even have to answer that?  Chug-a-lug :)

And so it begins.. Day 1: Starting weight 293.4

Today is the BIG day!  Literally!!  I am at my heaviest and have never been more excited and motivated to start a healthier way of life.  I plan on "weighing in" every Tuesday and I hope to keep track of my daily menus here, too.  It will be nice to have a record to refer to.

Things started out a little rough.  I overslept and didn't have time to make my eggs and bacon.  Luckily, I am a nanny for a little girl who dyed way too many easter eggs over the weekend :)  YUM!!  I did manage to throw a can of olives into a bag on the way out the door so I had a nice snack mid-morning, too.  Lunch was not as satisfying as I had hoped- Wendy's- but I stuck to plan!  Now I am getting ready to prepare a feast for dinner!! 

I AM STARVING!!  Not enough fat today.  Not enough to eat in general.  I am not one of those people whos hunger subsides quickly when low carbing.  I really have to load up on the fats to feel satisfied and to keep me from cheating.  I am making chicken legs with butter and parm and some cauliflower with cheese.  That should keep me full for the night!!  Otherwise, you may find me chewing on a stick of butter later.  No shame in that!!

B:  Two hard boiled eggs and mayo, 1 cup of coffee (and a bit of banana that I didn't even realize I put in my mouth till I swallowed it!! duh).
S:  One dozen large black olives, water.
L:  Wendy's side salad w. ranch, plain double stack sans bun, water
D:  Chicken legs w. butter and parm, cauliflower w. cheese sauce, diet soda (bad news, I know).

Okay, so my second post on my first ever blog is complete and it feels great!  Now I am off to the LC message boards for some food porn :)  Can't wait for dinner tonight!!

"Pre" Re-Induction!

I am no stranger to low carb eating.  In fact, I lost nearly 60 pounds a few years ago.  Gained it all back!!  My weight loss had been stalled for four months and I thought "If I eat some carbs maybe it will reset my system and I can start losing again".. WRONG!!  So after a few failed attempts since then, I am back and ready to give it my all!

Tomorrow is the big day!  The day I start my Atkins induction!!  So, today I am trying to find motivation!  Motivation to start my healthier life.  Motivation to fry the bacon for the week.  Motivation to do anything remotely productive!!  I did make it to the grocery this morning!  My shopping list is petite.. just like my bank account!

Heavy Whipping Cream
Eggs
Bacon
Chicken Legs
Unsalted Butter
Green Olives
Black Olives

My favorite part about LC eating is the fact that I can eat all of the items on that list and not feel the least bit guilty about it!!  It takes some getting used to.  Not just the induction flu, bad breath and the sporadic bursts of energy I have during the first two weeks of LCing, but also the fact that I have had "low fat, low fat, low fat" pounded into my brain for the past thirty years!  It takes a major shift in thinking to be successful in this way of eating.  Pile on the protein and fat and watch the pounds melt away!!

If anyone has any advice or words of wisdom to share, PLEASE DO!  I know I am on this journey for myself, but it is nice to know I am not alone!  I am still learning!
